Martelli Penne Pasta
Martelli pasta is reportedly made in Italy's smallest pasta factory, in the medieval town of Lari near Pisa. The pasta, to this day, is produced only by members of the Martelli family.
Martelli penne doesn't have ridges like your average penne - that's because its slow drying process means the pasta is porous enough to hold sauce without them.
Martelli's pastas are cut with traditional bronze dies and air-dried for around 50 hours (as opposed to conventional pasta, which is oven dried in under an hour). This makes the pasta particularly porous.
Packed in traditional paper packets.
