Rainbow Vegan Bagels 3 Ways

When I saw that we had these very colourful bagels in our Manchester shop, I was so excited. Being LGBT+ myself, I wanted to do a video with them as it's Pride Month. Here's my three favourite vegan bagel fillings, hope you enjoy! - Alfie
INGREDIENTS:
- Traditional Bagel Company Rainbow BagelsVegan ‘Cheesecake’ Bagel
- Vegan cream cheese - we used original ‘sheese’
- Billy’s Farm Organic Spiced Wholemeal Cookies
- Fresh Strawberries & Blueberries
- Maple Syrup to drizzle (optional)
Classic Avocado Bagel
- 1 small ripe avocado, or ½ a large one
- Juice of half a lemon
- Cracked black pepper
- Salt
Vegan Smoked Ham Bagel with Mustard Mayo & Pickles
- Tofurkey Smoked Ham Slices
- Pickled Sliced Small Cucumbers
- 1 tbsp Follow Your Heart Veganaise
- 1 tsp Mustard (or less if you’re not keen on the kick!)
METHOD:
To cook the bagels, follow instructions on the packet.Boil the frozen bagels for 2 minutes (or until the average size of a bagel, some took a little longer when we did it). This step is essential to giving the bagels that ‘shine’.
Then bake as instructed on the packet.
Vegan ‘Cheesecake’ Bagel
- Carefully slice a Rainbow Bagel with a serrated bread knife
- Take around 1 tbsp of vegan cream cheese and spread it across one side of your bagel
- Crush 1-3 biscuits, making sure there aren’t any chunks. It doesn't have to be too fine, but hard lumps will make it harder for the berries to stick to the cream cheese.
- Take some sliced strawberries and blueberries, and sprinkle them over the cream cheese & biscuit base.
- Drizzle some maple syrup over the top, for extra sweetness, balancing the cream cheese.
- Place the other half of the bagel on top, and enjoy.
Classic Avocado Bagel
- Carefully slice a Rainbow Bagel with a serrated bread knife
- De-stone the avocado, and remove the flesh from the skin. Mash it with a fork in a bowl or use a blender, working out any big lumps.
- Take your half a lemon, and squeeze the juice from it into the bowl of avocado - you may not need to use all of the juice, just do it to your taste.
- Using a pepper grinder, grind the crack black pepper into the bowl of avocado. Again, use as much or as little to match your tastes, as this will add a little kick.
- Add a pinch of salt.
- Spread the avocado mix over one side of the rainbow bagel
- Place the other half of the bagel on top, and enjoy.
TIP: Adding some sliced raw mushroom to the filling can make this breakfast friendly bagel even fresher and adds a satisfying texture.
Vegan Smoked Ham Bagel with Mustard Mayo & Pickles
- Carefully slice a Rainbow Bagel with a serrated bread knife
- Mix together 1tbsp of Follow Your Heart Veganaise and 1tsp (or less depending on your taste) of mustard to make the mustard mayo.
- Spread the mustard mayo mix on one half of your bagel
- Take around 3 slices of Tofurkey Sliced Ham, and fold each in half, across the bagel.
- Take enough sliced pickles to cover the smoked ham slices, and place them on top, spread out.
- Top the pickles with a little bit more mustard mayo.
- Place the other half of the bagel on top, and enjoy.
