Vegan Brazilian Lemonade

Recipe for Vegan Smoothie, perfect for Summer: Brazilian Lemonade with Coconut. Well, it's more limes than lemons, but it refreshing & tropical. Best served chilled.

One of our members Alfie tested this recipe, and here’s what they said about it:

‘As today marks the longest day of the year, the summer solstice, I wanted to make a refreshing recipe with coconut milk. I stumbled upon this whilst chatting to a non-vegan friend, and thought I’d try a vegan version with coconut milk - and it’s great! Hope you enjoy!’


Vegan Summer Smoothie, Brazilian Lemonade

INGREDIENTS

- 2 limes
- 100g sugar (we used BILLINGTONS FAIRTRADE GOLDEN GRANULATED SUGAR)
- 3 tablespoons SUMA ORGANIC COCONUT MILK 
- 700ml of water
- Ice



METHOD

  1. After washing and peeling the limes, cut them into wedges and blend them with the water for around 10 seconds. 
  2. Strain the juice to remove the fleshy bits of the lime, pressing the pulp to get all of the juice out.
  3. Pop the limey water back in your blender. Add the sugar and coconut milk. Blend until creamy.
  4. If you want to add ice, add it to your blended mixture and blend again until smooth, or until there are not big chunks of ice. 
Serve & enjoy!

Note: The coconut milk may rise to the top of the glass, especially if it's thick, and may split because of the acidity of the limes. This is perfectly normal, and will disappear with a quick stir.
